WHAT IS CAPER ?

Caper, a prickly and bushy Mediterranean plant, belongs to the Capparaceae family which is composed of approximately 120 species. Among those the most preferred commercial species are Capparis Spinosa and Capparis Ovata. It grows both vertically and horizontally on all sides of hills, especially in lime and clay-based soils in a sunny climate. The dry and hot sunny weather of Anatolien, especially in Cappadocia region, provides a perfect environment for caper plants. They have been growing in this area since the ancient times and they have a very special and intense flavour.

At the beginning of its growth, the caper plant flowers bud is called " caper ". It grows gradually until it comes into blossom as a beautiful pink and white flower with a diameter of approximately one-inch. The pink and white colours of this flower creates a beatiful harmony. The flowers pistil is called " caperberry ".

Capers are picked up only by hand, between the first of May and the mid August. It is such a sensitive and laborious work that only experts are able to carry out  the picking process among the new branches without damaging them.

The fermentation process of the caperberry is controlled in brine just like the caper.

The benefits of the Caper have been known for a long time. It has been used extensively in medicines, food, cosmetics and dye industries for many years, in both processed and unprocessed forms.

Caper seeds are the major ingredients of medicines that are used against snake poisoning.
