Potato Salad With Caper Cream

Ingredients :

750 gram of potatoes
Salt

For sauce:

150 gram cream
2 tablespoon of strained caper
4 fresh onions, mini cut
½ tablespoon of lemon juice
Grinded black pepper
For decoration: 4-8 fresh onions cut as tuft
A tablespoon of fresh peppermint.

Directions:

Boil the potatoes in the salty water for about 15-20 minutes until they get soft.  At the meantime cut the green onions like tuft and leave it into the iced water for at least 30 minutes.  After softening potatoes peel them and cut into cube slices.  Prepare the sauce by putting all sauce ingredients. When the potatoes are still hot put the cream in it. Decorate the salad with fresh onions cut as tuft and chopped peppermint
